Pøbelpotet – Mer lokalmat i offentlige måltider (Tent 2)PØBELPOTET is the Trøndelag version of "dirty fries." Our dish is made from scratch with Trøndelag ingredients; it is sustainable, tasty, and a bit healthier. Fried potatoes, cheese, garlic and chili mayonnaise, and pickled red onion.Allergens: Lactose, egg
Potetpassion à la Oppdal – Fjellmandel fra Oppdal (Tent 2)A creamy potato soup made from Mountain almond potatoes from Oppdal with crunchy Fenalår from Norway. The products are part of our food heritage and therefore protected as a geographical designation.Allergens: Milk
Meny's candy salmon salad – Meny (Tent 2)This dish features salads from Frosta in good company with organic sprouts from Norske Spirer, smoked salmon candy from Lerøy, Norwegian strawberries, maple syrup, balsamic vinegar, and Røros sour cream. On the side is Nordic sourdough crisp, an exceptionally crispy chip made in Norway from thin slices of traditional rye sourdough bread.Allergens: Milk, sulfites, wheat flour, rye, barley
Klæbu Mini Pizza: Slightly coarser and gluten-free – Klæbu Bakeri (Tent 2)Good, gluten-free, and medium coarse mini pizza baked with Norwegian oats. Topped with tomato sauce, mozzarella, and cooked ham.Allergens: Milk

Elk and bacon pizza with Stracciatella – Toddum Gårdsysteri (Tent 4)Delicious handmade pizza with elk and bacon from Namdalen. Topped with lingonberries and Stracciatella from Toddum Farm Dairy.Allergens: Gluten

Chorizo pizza with hot honey – Smaker fra Øyriket (Tent 7)Pizza with young cave cheese from Hitra Farm Food, venison chorizo from DalPro Farm Food, and hot honey made from honey from Nordheim Farm and spices from Hitra Spices.Allergens: Milk, rye, and wheat gluten
White pizza with smoked salmon – Smaker fra Øyriket (Tent 7)Pizza with white sauce and young cave cheese from Hitra Farm Food, topped with red onion, arugula, and smoked salmon from Garnvik.Allergens: Milk, rye and wheat gluten, egg, fish

Garnvik's Flavorful Maki with Warm Smoked Salmon – Garnvik (Tent 7)Garnvik's Flavorful Maki is made from the leftover product of our own warm smoked salmon. With that, we’ve created a delightful and tasty maki with warm smoked salmon. Not only does it taste fantastic – it also helps reduce food waste!Allergens: Fish (salmon), milk/lactose, sulfites, sesame, and egg
Garnvik's Flavorful Maki with Warm Smoked Salmon – Garnvik (Tent 7)Semi-coarse bagel, full of delicious flavor! We have topped it with our smoked salmon with juniper and fennel – a really good combo. Cream cheese dressing, crispy apple pieces, red onion, fennel, and fresh salad top it all off. A real treat you can just take with you. Venison grill with king cheese – Dalpro (Tent 7)Grillwiener deluxe. An exclusive interpretation of a beloved classic. Where juicy, crisp grillwiener made from first-class venison from Dalpro meets the characteristic, flavorful King Cheese from Hitra Farm Food. The sausage is grilled to perfection and served in a classic hot dog bun to preserve the taste of great craftsmanship.Allergens: Milk, gluten
Fish soup symphony – Hitras Krydderi (Tent 7)Rich, creamy fish soup with vegetables. Our unique Fish and Seafood spice blend adds a signature touch to the soup. Topped with homemade agar pearls with parsley. The soup is served with our specially made focaccia bread with seaweed salt, herb butter with our spice specialty and wild garlic.Allergens: Fish (cod), lactose (milk and cream)
Innherred symphony – Innherred (Tent 12)Potato cake roll baked by Bakarkjerringa, with lemon mayonnaise made from rapeseed oil from Berg Farm and lemon oil from Gold Of Italy. Topped with Salsiccia sausage fried with honey from Unheim Honey, on a bed of crispy salad from Frosta and Lingonberry Dream from Rekkebo. On the side lies Coppaskinke from Halsan Meat that completes it all – sweet, salty, and tangy from Innherred. Hope you enjoy!Allergens: Milk, wheat, egg, sulfites, mustard

TUTTI – Innherred (Tent 12)Potato flatbread from Bakarkjerringa filled with vanilla cream made by Tverås Gårdsmat, blended with summer honey from Unheim Honning. Topped with a small dollop of whipped cream and local raspberries with dried pollen.Allergens: Milk, wheat, egg, sulfites (pollen)
Inderøy Summer: Rhubarb & Blackcurrant Pie – Kjerringa me' Straumen (Tent 13)Rhubarb and blackcurrant pie with heather honey and lemon cream. Both the rhubarb and blackcurrants are home-grown at beautiful Skarnsundet – it’s the taste of Inderøy summer!Served on a birchwood board from the small farm – reuse it as a placemat afterwards! The lemon cream recipe is made by Maren Myrvold.Allergens: Egg, milk, wheat

Trøndersk Bombe – Norsk Gardsmeny (Tent 18)Norsk Gardsmeny's version of the classic Norwegian "success cake". Handmade in our kitchen/pastry shop at Tillertorget Shopping Center. Made with top-quality ingredients: almonds, eggs, chocolate, heavy cream, butter, and vanilla sugar. A true dessert experience!Allergens: Egg, lactose, may contain traces of nuts
In 2024, SalMar took home the Audience Award for Best Oi! Dish with their creation “Salmon in Good Company.”
“Our dish features 99% local ingredients from Trøndelag, and we proudly present our contribution: lightly cured salmon from Frøya with aquavit from Inderøy and wild herbs from Trøndelag. Whipped Røros sour cream with feather wrack served on Frøya flatbread, all topped with pickled onions and crispy white curly kale.”
