Pizza Portafoglio (folded pizza) with tomato sauce, mozzarella and spicy nduja. We use tomatoes from Greci and mozzarella from Bresica, northern Italy. For this pizza we use Norwegian Nduja by Røroskjøtt! 40% of the dough is made with Regal Tipo 00 flour.
