Many people believe that autumn is the prime season for foraging, but there are exciting plants you can harvest all year round! This is a practical course in foraging spring’s wild plants. Join Jim-André Stene from Trøndelag Sankeri on an educational walk in the forest! Taste, smell, and learn about the species and plants found in spring and how to use them to make wonderful dishes at home. Jim-André will guide you through what to look for to find the very best seasonal ingredients. He will cover different species and give tips on what you can create with them. Maybe you’ll impress friends and family with a rich wild garlic mayonnaise or a refreshing glass of dandelion syrup? Of course, you get to take your own foraged treasures home, so it’s a race to be the best forager! About the instructor: ‘The Wild Farmer’ Jim-André Stene is the founder behind Trøndelag Sankeri, which supplies several hundred species of edible wild plants to restaurants across Norway. Together with Jørgen Ravneberg, he co-authored the recently published Mushroom Foraging Book (Soppsankeboka). Jim-André is a sought-after instructor who has been nominated for the Food Award (Matprisen) and Local Food Entrepreneur of the Year.

Norwegian apple cider has seen tremendous development and growth over many years, and now production is also gaining momentum in Trøndelag. Yngve from Inderøy Mosteri will share insights on what it’s like to grow apples in Trøndelag, what it takes to produce apples of top quality for cider making, and present some of his own flavors. Ulrik from ØX will talk about the cider production process - from apple juice to finished product - what makes Norwegian and Trøndersk cider unique, and present different cider styles.
