Fruit distillate, or eau de vie, is an exciting category of spirits with a long history in Europe. It can be made from all kinds of fruits and berries and is essentially the distilled essence of the raw ingredient. Head distiller Ulrik from ØX will talk about how these spirits are made, what makes them so unique, and present a selection of samples – all made from 100% Norwegian ingredients and produced in Trondheim. There will be tastings of various fruit distillates, including both aged and clear varieties.

About the instructor: ØX has been operating a distillery since 2021 and has focused extensively on distilling Norwegian fruit – particularly apples and cherries, but also many other varieties. Ulrik Bjerkeli is the head distiller at ØX and has been involved in building both the brewery and the distillery from the ground up.
